ABOUT Raisin

The dried form of grape is called raisin. Raisins are in the category of dried fruits that have different varieties regarding size, color, taste, processing method, and usage. It has a naturally sweet taste, a high amount of carbohydrate, natural sugar, and vitamin C.

In addition, it is a great source of energy which makes it a great choice for snacks. Cooking, bakery, pastry, and brewing are different usages of raisin.

Iran is the second exporter of raisins in the world and has vast fields of grapes from east of Iran to the west and northwest. the diversity of weather and soil makes different grapes with different characteristics for different uses.

Raisins are made with different processes and colors; black, brown, dark brown, golden, or green. the color of raisins depends on the drying process either it is sun-dried or shadow dried or in drier.

Raisins and sultana are produced from the same grape and the only difference is the way they are dried. Raisins are dried naturally while golden raisins are treated with SO2 during its process, but the Sultanas are solution dipped before drying.

Golden raisin

The product is made from seedless grapes. Golden Raisins are grown in the sunny vineyards of Bonab and Malekan cities, they are treated with SO2 during the process and shade dried to keep the golden color with a naturally sweet and fruity flavor. The best quality grapes for making golden raisins are growing in Bonab area and this city is known as the golden grape yards in Iran. After being double washed, raisins are dried, coated with vegetable oil, stemmed, mechanically cleaned, laser sorted then goes through metal detection under hygienic conditions to become ready to use the product.

Kashmar Long Raisin (green/ golden)

The product is made from seedless grapes and also known as long raisins. Kashmar city is located in the east of Iran and it is the main producer of this kind of raisins. Long raisin is famous for its special sweet and sour taste and the long shape. Kashmar raisins are available in two green and golden colors, the golden one is made by treating with SO2 and dried in shade to keep its golden color. Like other raisins. Kashmar raisins are also dried, coated with vegetable oil, stemmed, mechanically cleaned, laser, and hand-sorted.

Sultana

SULTANA is made of the best seedless grapes. To reach the desired quality, all raisins are washed and sorted twice in each process and then dipped in edible oil and then dried. Iranian sultana raisins are available in two light brown and dark brown colors.

They are high in sugar content and have a sweet taste. it is mainly used as snacks and also in bakery, pastry, cooking, and other food industries.

Sun-dried raisin (Thompson)

The product is made from seedless grapes. Sun-dried raisins are seedless grapes dried in direct sunlight and as a result, they are typically in dark-brown color. This kind is totally natural without any additives and chemical processes. Sun-drying is the natural method to produce raisins which gives them a particular intense sweet flavor. Like other raisins, sun-dried raisins are coated with vegetable oil, stemmed, mechanically cleaned, laser, and hand-sorted.
