What are raisins?
Raisins are made from seedless grape varieties, air and sun-dried.
Characteristics of Raisin
Raisins are full of Iron, potassium, calcium, and vitamin B. Besides, raisins contain antioxidant properties that help prevent cellular destruction. A suitable amount of fibers in the raisins empowers memory and protects people against Alzheimer’s. Selenium in raisins is also good for the skin. Raisins are also beneficial for bone health due to the high amount of calcium.
Production of Raisin
Turkey, with over 300,000 MT, is the leader in Sultana production, and the US, Iran, and China are following.
Consumption of Raisin
From ancient times, raisins have been consumed for various purposes. In ancient Rome, raisins were prized for decorating places of worship and for sports winners. Iranian Farmers produce many types of raisins for cooking and making herbal remedies.
Types of raisins and their production methods
Green raisins
Green raisins are made from a cold emulsion containing potassium carbonate and raisin oil (Australian oil). After harvesting, the grapes are cleaned and immersed in this emulsion, which is then hung on strands of wire in the sanitary warehouse to dry.
Golden raisin (Smoked)
The whole process of making this kind of raisin is like making green raisins, except using sulfur gas to make smoked raisins. After dipping grapes in warm water, the sulfur powder is poured into a small tray and burned. So, grapes are coated with sulfur dioxide, which makes them stay golden throughout the drying process.
Current raisins
A small, sweet, seedless grape called “Black Corinth” makes currants. After harvesting and drying, the grapes are spread in a clean place, collected, and stored in large baskets.
